Whiskey Recipes - Mushroom and Whisky Soup

This is just enough for two good portions (one for each of the Whisky Boys)mushroom-soup

* 350g (1 lb) mushrooms, sliced (use your favourite or mix one or two different types)
* 2 large onions, chopped
* 1 tbsp French mustard
* 1 litre (2 pints) stock
* 150g (5 oz) good bacon, finely chopped
* 375ml full fat milk
* 2 tbsp whisky of choice (not too strong or smokey)

1. Cook the mushrooms and onions in the stock and mustard, simmering gently. After 20 minutes, add the ham, milk and whisky and heat through, being careful not to boil. Serve with lots of rustic brown bread and butter. Easy peasy. .
2. Have a wee dram at the ready.
3. Enjoy
