Whisky Recipe - Whisky Cheesecake (Made with Bailey’s Irish Whiskey Cream Liqueur)

Ingredientsbaileys-irish-whiskey-cream-liqueur

15 chocolate digestive biscuits (I like chocolate digestives)
100 gms unsalted butter
15 gms soft brown sugar

Break up biscuits in a poly bag and add broken biscuits, sugar and butter to a frying pan. Allow the butter sugar and biscuit to blend together. Remove biscuit base and compress into a spring loaded 8 inch cake tin. Chill for about 1 hour.

Topping

350 gm Philadelphia Cheese (full fat) mix until smooth and creamy
100 gms icing sugar - add to Philly
400 mls double cream - continue to add to mixture 1/2 pint of Bailey’s Irish Whisky Cream Liqueur

Mix cheese/Bailey’s mixture until smooth and creamy. Place on top of chilled biscuit mixture and chill for at least 3 hours.

All you need to do now is to eat and enjoy.

  1. I just made this - was really nice. Next time I’m going to try it with the drambuie cream for a bit more of a kick
